Winter Roast Vege Salad

Believe it or not, I eat ALOT of salad.  It usually consists of tomato, raw red onion and baby spinach.  Pretty basic and bland. Tomatoes are $12 per kg at the moment.  It makes for a very expensive rabbit feed....  So I put this together.  Inspired by winter and roasting.  A no brainer really!



Ingredients

 x red onion
1/4 of a crown pumpkin
2 large carrots
200grams feta
1 large red onion
1 can of chick peas (optional, but recommended)
Baby spinach

Method

Preheat the oven to 180 degrees Celsius. Cut up the pumpkin, carrots and onion onto bite sized portions. Put into the oven for 40 mins.  Add the baby spinach to a large salad bowl.  Once the veggies are cooked add them to the bowl too.






  Crumble the feta with your hands over the salad and toss.  Add balsamic vinegar to taste.
