Ham Challenge Day 2- Fried Ham Omelette


Ok so this was an obvious one to do.  We are having Thai takeaway + a few quiet drinks tonight instead of going out to celebrate NYE.  So I did the Ham challenge for breakfast instead (plus I am making that epic ham salad from day 1 again for lunch)

Fried Ham Omelette

Ingredients

4 eggs
a hand full of thinly sliced leg ham
1/2 a tomato
A small hand full of baby spinach
1/3 of a white onion grated
Salt to taste
2x tablespoons of olive oil

Method

 Add chopped up ham and a tablespoon of olive oil to a fry pan on medium heat and fry for about 5-7 mins.  Remove pan off heat and set aside.  Beat the 4 eggs and ad to another pan on medium heat.   Put all the ingredients evenly on one half of the eggs like a semi circle (see image below).

Wait till the egg is predominately cooked and start to fold the half of the egg that isn't covered with all the ingredients over the half that has all the ingredients.  Once cooked through both sides of the omelette you can serve.
